ok so there's fate stay night which is the sequel and fate zero which is the prequel, most real fate fans would recommend you to watch fate stay night first then go back to zero
you should also note that fate stay night is made up of 3 routes (think of it as like 3 different ways that a story can play out), skip the 2004 one cause they buchered that adaptation, unlimited blade works is the main one you should watch, after that there's the heaven's feel route which comprises of 3 movies
once you finish the fate stay night routes, then you can watch the prequel which is fate zero
lemme know if you need clarifications it's a bit confusing initially
it's one of my favorite series i highly recommend
these are the canon series, anything else you see are alternate timelines
but there are some that are really worth watching if you are interested

the anime is a lot more easier and quicker to consume
think the visual novel is recommended if you really want to after finishing the anime
also remember how i mentioned the 2004 adaptation was garbage, you could go and read that specific route in the visual novel

yeah it definitely affects romance more but I think it also applies to other genres too, like if you look at the main action shows like jjk or kaiju no 8, they follow a very similar formula
romance shows are just a lot more tied to the slice of life genre so your characters and their interactions have to be really interesting
cause there usually isn't much happening since it's supposed to simulate everyday life
unless it's very out there ideas like rent a girlfriend or 100 girlfriends
