Im at a point where some of my heroes are starting to fall behind the quests i need to complete in order to gather the material i need. So, whats the best way to equip my heroes? Just give them the highest tier white gear i can afford?
Its worth to spend a lot of gold in equipment, or should save and use gems for it and aim for better gear?

But to answer this question, you don't need to spend gems on any gear. Only worry about green or white quality double stat gear from market and enchant with the heros element and an appropriate sprit.

A good method for gearing is actually to intentionally use a piece or two of 
quality equipment and to have everything else be higher quality. This is a strategy called "break bait" where you nudge the game to break the specific item(s) you want because they're more replaceable.
