The Ai always does the same tasks no matter the time of day, which makes everything a bit stale..
But maybe they could change it up whenever its night, I.e Peterson (And everyone else) Sleeping more, or the baker cleaning up shop a bit more and focusing less on cooking.

the baker door could remain automatically open until like 6pm

then the baker will close it and lock it

Perhaps mayor could activate a security system.

Or make it harder to get items.

Otto could maybe just go to sleep.
