GPU crashes like this typically indicate something went wrong with your graphics card or its drivers.

If it's only once in awhile, may have just been a weird error.

If it's persistent, something that's helped me in the past was using DDU (Display Driver Uninstaller) to do a full clean uninstall of the drivers, then installing the drivers fresh (download the drivers first, then DDU, then run DDU in Safe Mode, then restart and install your downloaded drivers).
Check driver versions as well, since sometimes Nvidia will release a 'bum' driver version then only fix some major issues with it after a few months, and installing an older version you know works tends to go better.
