Making egg rolls & pot stickers tonight. No meat, no veggies other than what is in the egg rolls.
Added beef ramen deep fried half the egg rolls & nuked the other half. Oven baked last time so I'll see which method is best.
Not a fan of deep frying. makes the roll too hard & crispy. I like it softer & chewy.

I don't discriminate food if its good, but I do like caramelized onions too. This burger I made a while back has caramelized onions, mushrooms, and swiss cheese on a home made bun.
I tend to brush my teeth to combat onion / garlic or any bad breath, works for me ๐ and I get to enjoy what I like.

Speaking of brisket..... I'm still trying to get up the nerve to take the one out of my freezer & make. Since I don't have a smoker to do it right, the instructions I found for using your oven will take 2-3 hours in the oven. Cooked too short of time- it's tough; cooked too long- it's tough. there is only that sweet spot where it comes out perfectly tender & since I've never made brisket before, I have no idea where that is.

@glossy carbon Eggs need to be cooked on a very well made non-stick pan or in a pan with a good coating of butter or oil-- but not so much the egg is swimming in the butter or oil as it cooks & is dripping off when egg is removed from the skillet. Cooked over medium heat so not to overcook the egg.
They come out fine, just never taste all that great. Wherever I make a sandwich or something of the sorts, it's always bland/dry/etc.
Simply adding a little sea salt & ground pepper will perk up the taste considerably.

@hazy creek this looks perfect to me. Super tender soft, though many think thats "bloody" its not actual blood its just natural juices that come from the meat that are stained.
Though a more medium rare instead of mostly rare is subjectively preferred for tenderness and flavor. If you over cook beef you looks texture and flavor.

@pliant python yes the last several pictures I posted were very un healthy I was making a point to speedboi, my chicken and broccoli dish is extremely healthy, no oils, no fats, lean meat and vegg.

I've been talking about that beef brisket for weeks now, but so far had been afraid to make it since 1) I've never made it before & 2) if cooked incorrectly, eating a leather shoe will be more tender... Anyways, it is marinated in Liquid Smoke, a little salt, pepper & seasonings and on it's way on an 8 hour cook time on Low in my slow cooker. Looks like I'll be able to see if I did it right around 6-7PM tonight. Probably make some potatoes & peas or green beans to go along with it.
I've only been cooking my briskets in the oven @gaunt bough and have been doing so for years and as long as its the right temp and for the right length of time per pound it should come out super tender and delicious. Its actually less difficult than most think. But yes if you don't cook it long enough it'll be like shoe leather and if you cook at the wrong temp it'll force all the juices out of the meat. So best option is to google best temps / times for oven roasted brisket and you will surprise yourself with the results.
I tend to bag mine like a turkey. I take 5-6 heads of onion and caramelize them and pour that over the seasoned brisket in the bag along with a head or two of smashed garlic. Garlic powder, Onion powder, Paprika, Salt, Pepper just a few seasonings that would go great
Just a note for temps if its too high it'll cause the meat to contract and squeeze out all the juice you want. so finding the right temp and time are key :). Hope yours turns out great for you

@glossy carbon Once things improve, I'm thinking of getting an outdoor smoker (or building one) to do meats properly. Get up around sunrise and take pre-seasoned meat to let cook all day long in the smoker to soak in all those smoke flavors & have a variety of hardwoods on hand to give the hint of hickory, apple, cherry, maple to the meats depending on cuts... A nice slab of bacon smoked all day with hickory & maple....... I'll probably have all my neighbors standing in line with their plates & forks ready once I pull the meat out of the smoker at the end of the day... ๐คฃ

the Liquid Smoke I poured over it made a good substitute for actually smoking it in a smoker.. that was a plus.
@glossy carbon hardest part of it all was letting it sit & rest for 20 minutes after I pulled it out of the cooker...... All I wanted to do was slice & eat. but I learned the hard way the importance of letting meats, especially beef, rest before cutting.

I had to put the mozzarella cheese I bought this month in the freezer so it wouldn't mold since the store made pepperoni rolls were too small to even stuff with peppers & cheese. @kindred canopy Just starting. Went to the doc on 10/30 & he said the swelling in my legs was due to the main vein that runs through the trunk of your body is getting compressed allowing fluid to accumulate in my legs. So I'm on a rapid loss program.....
For different reasons so am I @gaunt bough I've already lost 12lbs in the last two weeks but I'm still eating and not hungry. Egg whites instead of whole eggs drastically cuts breakfast calories but still fills me up with some good ol oatmeal with a spoon of peanut butter in it.
Lots of grilled / pan cooked skinless chicken breast with as much veggies as I want for all other meals.
Calories in versus Calories burned and while I'm in the negative of the intake vs burned then weight loss is inevitable. just as long as the calories are filling and don't make me feel hungry I can stick to this as a eating style change in stead of a "diet"
Many different recipes that can help watch the caloric intake but yet provide a filling meal can be found on the youtubes ๐

And for a snack, I've put on a dozen eggs to cook for a hard boiled egg. 1-2 of those is almost as filling as a sandwich & less calories than a sandwich. And I might devil a couple of them just to have for a cheat food.....
@glossy carbon If you do a carnivore diet you don't have to watch your caloric intake. Your so satiated that the calories will be in check. The fact that it is low carb by definition helps with the weight loss. The intermittent fasting comes almost automatically.
But then again, if what you do now works for you, keep going ๐ There are a lot of ways to do it!

I'm at a weight that I'm comfortable with so I eat a carnivore-ish lifestyle. Basically all meat, eggs and organs with an ocassional piece of fruit or some white rice.
i prefer some carbs in the morning to kick start the day (fruits) and no carbs in the evening (meat + vegetables) mostly
but yea i'm a proud carnivore person =)))

I like the carnivore diet except I find myself too exhausted on it. I need my fruits and vegetables for energy otherwise the all protein thing makes me too sluggish.
Boneless teriyaki pork chops, Southern style apple & caramelized roasted carrots.
First time making the apples. I have 2 bags of Granny Smith apples I need to use up, so this recipe was the simplest way to use up 4 of them. A little Allspice for a bit more of a flavor kick (not part of the recipe), ground cinnamon, sugar, butter & apples cooked until the apples are tender-- a nice simple apple recipe that actually pairs good with pork (and not as a dessert)
Depends on what kind of diet the person is on & what they are trying to accomplish. Breads are one of the worst things to eat while dieting-- unless it is whole grain. Anything gluten free is actually bad for you too-- unless you are part of the <1% of the population that does suffer from Celiac Disease. Removing gluten also removes all flavors... so to add that back, they add more sugars to the mix. Might as well just eat an entire bag of sugar then.
Starchy foods are bad if you are on a low carb diet since the starch is turned to sugar by your body.... and converted into carbs.

Planning on spaghetti tonight. Almost pulled ground turkey out of the freezer to thaw..... I might still change my mind & put the hamburger back before it starts to defrost.

I toasted the brioche buns in garlic butter and bacon fat
And same thing with the meat
I had mozzarella,cheddar and masdaam on it
With bacon
And iceberg lettuce with pickles and tomato
And maybe some onion rings
And possibly caramelised onions
Sauces were burger sauce and garlic sauce
So basically Iโm gonna be fat for another week

Not after they are cooked... Kinda slimy when you're prepping them & doing the egg dip & flour toss.
I used garlic & herb seasoning in the flour & a little seasoned salt. And the spices help give it a good flavor. I could have made them more breaded if I double dipped them in the flour-- cook them for a few minutes & took them out of the skillet & tossed them more times in the flour until a nice thick breading built up on the livers.

Guess I'm making another batch of peanut butter no bake cookies tonight. My wife's sweet tooth is wanting cookies......
Instead of cookies that takes longer to dip out of the pot to place on the cookie sheet, I just dumped the entire mix out & spread it out evenly to make a sheet of cookies. Once they firm up in the fridge, I'll take a pizza cutter or a knife & cut them into bars & put them in a storage container & place them back in the fridge to stay cool.

And here is why I'm using cayenne in lots of my dishes now--- "Add cayenne powder to soups or stews in small amounts to start to give your metabolism that jump-start. but I don't limit it to just soups or stews. If pepper would be added to a dish, I'll add a pinch of cayenne instead of black pepper.

Yea-- nonstick pan in good condition is a must. With oil, it forms a crust around the edges of the pancake. No oil you get that even golden color like in your photo.
I prefer a very well seasoned cast iron skillet works amazing and if seasoned well just as non stick as any nonstick pan.

I have a large bag of chicken I'm thawing out for dinner tonight... No clue what the pieces are-- I thought it was a bag of wings, but I think it's thighs. If so, then I'm going to make them 2 different ways tonight since there is so many of them & I'll have to cook them all once they thaw out... some will be a shake & bake style coating baked in the oven & others will be made in our air fryer that I rarely used since we got it...

@alpine summit How strong is curry in taste? I've stayed at motels before owned by Indians & the smells of spices seemed to be everywhere in the whole complex. A few times I would have loved to have been asked to join them-- some of their meals looked & smelled delicious. Mediterranean & Indian dishes are on my to do list to try making once I can find the right markets to buy authentic foods to cook. I know of a couple good Asian markets for some Korean dishes I want to try some day, but I don't know of any local Med or Indian markets-- unless I go to the Wharf District in Pittsburgh, PA.
Itโs quite mild because I donโt make it often and Iโm not that good with spice so I just put a little in
I love curry and there are so many styles to learn from Indian Curry and the dozens they have to Asian Curry from South East Asia to Japanese and all in-between.
