This weekend is going to be a decent meal & something I've not made in a long, long time. Beef tips with portabella mushrooms & egg noodles in sauce. Now I need to think of the veggie-- tired of peas, corn, green beans all the time. I'm leaning towards either seasoned grilled brussel sprouts in a cheese sauce, broccoli in a cheese sauce or grilled asparagus in a cheese sauce. Not a fan of brussel sprouts, but they are OK if smothered in cheese.

@kindred canopy It has beef tips in it. Usually if the store has the ends they cut off sirloin steak when they trim it for the steaks, I'll buy a package of that & if not, then I'll get a nice cut of sirloin steak & then cut it into cubes for the dish.

Plus... if we weren't meant to eat meats at all (as some of the more psycho vegans say), then we would not have incisors that are made for ripping meat- all our teeth would look like that in a cow's mouth if we were never supposed to eat meat. What all is in a Country Casserole?
Well, mine contains:
ground/minced meat,
Carrots & leek & half onion,
Diced Potatoes;
Cooked together and spiced with pepper, paprika, salt, caraway (?)
Easy and awesome
And soft, not that much to chew π
Basically the one pot lasagna is the same, but ofc with broken lasagne sheets instead of potatoes, and a bellpepper instead of leek, aaand a can of tomato.
I make my lasagna one of 2 ways-- all depends on how much time I have -- I either place a layer of marinara sauce on the bottom of a 13x9 inch pan, then a layer of uncooked lasagna noodles, more sauce, ground meat, Ricotta cheese, shredded mozzarella, & keep repeating that until all noodles, meat, sauce & cheese is used up & it is topped with a thick layer of shredded mozzarella & provolone or use pre-cooked noodles & same process then.

I can understand that some people can be emotionally attached to meat like pork and beef because those 'parts' once belonged to an alive thriving animal, but once that animal dies (||slaughtered||), those body parts become a means of sustaining the life of another.
I am grateful for every morsel of meat (and vegetables) that I consume; how lucky we are to live in these times where we can buy and consume meat anytime we desire. ^_^

I learned the hard way to never go grocery shopping on an empty stomach, so I took a can of beef stew & a package of canned crescent rolls, spread the bread dough over the beef stew & baked it in the oven for about 15 minutes to cook the bread. had a little dough left over, so I just rolled them up into little crescents.

Tonight though since I am in a lot of pain from walking 2400 steps in Walmart pushing an over filled & heavy buggy, dinner will be a little late & will be General Tso's chicken, eggrolls & pork pot stickers. It's all prepackaged 'heat & serve', not from scratch like I would rather make.

It's inhuman to not like a Coke Float or a Root Beer Float. And the milk in the ice cream kinda dissipates the CO2 in the Coke or Root Beer & makes it flat.

OK... this weekend was messed up so I never got to make my beef tips & egg noodles-- that is today's menu. I forgot to get the Portabella mushrooms while at the store the other day-- got sidetracked with being tired & had already had to back track in the store 5 times to get stuff I forgot-- did 2400 steps in that store Friday & was in pain the rest of the night... Plus I got really sidetracked watching a couple college students doing their grocery shopping........
So I will be using plain generic mushrooms instead of the more flavorful Portabella's..

I don't buy asparagus too often. It is a bit tricky to cook just right. The smaller diameter cook faster, and depending on how long it's sat in the store since it was harvested also determines cooking times. the older it is, the tougher it is & takes longer to cook to make tender.

My next 'fancy' meal is going to be beef brisket when I make it. I've never made it before, but from what all I have read about it-- make it wrong & it is going to be so tough it will be like eating shoe leather. Since I do not have a meat smoker & will need to use my electric oven, it appears, from the recipes I've glanced over so far, I will be starting that cooking in a low heat oven (about 300 degrees F) about 9-10 AM to be able to eat it for dinner that evening around 5-6 PM.

One easy no oven required pie is the one I will be making in a couple hours-- Cherry cheesecake. Graham cracker pie crust, lemon juice, cherry pie filling, condensed sweetened milk & softened cream cheese is all you need.... and a refrigerator...

Here is the recipe for no bake cherry cheesecake...
Simple dinner tonight-- cheeseburger. toasted bun, sharp cheddar cheese, a few sweet onions & mayo.
Now to learn how to fry oysters so my wife can have a snack. Never did it before & they do not keep very long after you buy them & at almost $8 for the container-- I'm not letting them go to waste for waiting too long to cook them.

A nice thick pot roast seared on both sides & lightly seasoned with some sliced onion, minced garlic, salt, pepper & Worcestershire sauce is now in the slow cooker for the next 9 hours to cook.

This made for a different taste to mac & cheese-- used the leftover cheese sauce I made for the asparagus I made a few days ago. It had a little bit of seasonings in it & gave the macaroni a bit of a change in taste.
