Im wondering if theres a way to wipe my current VM and start a new one without cancelling my sub or starting a new sub. Any info is appreciated.

You can reset your shadow via https://eu.shadow.tech/account/, on the Shadow PC tab > "Manage my subscription" Note: This doesn't clear additional storage and your Shadow PC should be shutdown before resetting.
