When i play games on shadow virtual machine, my in game sensitivity seems to be lower than when i play on my actual computer? (even when they are on the exact same setting) Is there any way to fix this

Could just be due to the latency, giving perceived "slowness" What is your latency to Shadow?

After playing a game for some time, post screenshot of the Shadow Quick Menu stats, filtered to show last 10 mins.

(Put Shadow in windowed mode to be able to screenshot from local machine)

Yes, it's the latency that fluctuate

Anyway, you stream the game, so with 25ms of ping, you can feel a little latency, which is absolutely normal.

I have the same latency as you, and with single player games, is OK, while on multiplayer/competitive games, you have a disadvantage of the delay commands due to the ping.

If you want the best less delay possible to stream games, is Ethernet if you want to stream, but obviously you cannot eliminate the distance of your Shadow from your home.
Otherwise is play it local.
