It worked the other day but not today. Using steel series headset over Bluetooth, audio coming through locally no problem, when I launch shadow, it doesn't pick up the device full stop. I win alt o and it's there under audio and input but nowhere for output? 🤔

Tell a lie, I gave up, plugged in my wired headphones, and same story, picking up microphone but not audio... Only says Samsung high definition device as output option, nothing else.
There's nothing to setup on Shadow or on the Quick menu, for audio output.
Just set your default output from your local computer's settings.
