Mmmm and yeah mashed potatoes, with black pepper simmered in the water for like 15 minutes to extract and mellow out the pepper flavour and get more of the heart notes.

Had it all in a dutch oven with some thyme, rosemary, and bay leaf. chicken stock and red wine vinegar
