#Homemade Chicken grippers(feet)

ingredients: Chicken feet(preferably from a jockey), light soy sauce, dark soy sauce, ginger, toasted sesame oil (optional), green onion, orange juice, orange zest, star anise, black peppercorns, szechuan peppercorns, garlic, sesame seeds, oyster sauce rice wine vinegar, cinnamon, and honey.
recipe : cut the nails off the chicken feet. Add 4 cups of water (1qt) to a bowl as well as green onion, garlic, orange zest, ginger, cooking wine, salt, and pepper. bring to a boil before adding chicken feet and cooking for 10 minutes, stirring occasionally. Turn off heat and let sit for another 10-15 minutes before rinsing in colander to remove gunk. Take black peppercorns, one star anise, sezchuan peppercorns, cinnamon, and blend or grind up. Heat up a generous amount of oil before adding the spice blend as well as finely chopped garlic and ginger. Let spices fry for a second before adding chicken feet, light soy sauce, dark soy sauce, oyster sauce, toasted sesame oil (optional), honey (for sweetness), rice wine vinegar, and half a cup of water or chicken stock. Let the mixture reduce at a medium temperature until sauce is thickened and to your liking. Add to bowl and garnish with ground black pepper, salt to taste, green onion, and sesame seeds for presentation.
I somewhat messed up the recipe bc I needed to let it rest for longer so mine ended up more chewy than I would like.
