I don't understand why fps games use a viewmodel, is it for performance? Because I feel like my game would be more realistic if I just did it without a viewmodel.

different fps games use different viewmodel techniques for different reasons. it's not about performance, it is more how the end result looks and functions compared to the needs of the game.

there are techniques you can use to offset the viewmodel and rotate and move it base on movement and camera rotation, recommend looking into those.

and not to mention the control you get from the client

having all that sway and whatnot appear on the 3rd person character would look weird
