I made this strawberry charlotte cake because I saw a charlotte cake in Shoushimin Series and wanted to see what it tasted like. The texture is very soft, the lady fingers on each layer have become very spongy, and the lady fingers that are on the edges have become spongy but have more resistance than the lady fingers on each layer. Each bite is not sweet, but if taken in large quantities, it can feel a bit rich – don't ask me how I know.
The base of the cake is *gelatin*, *whipping cream*, *vanilla*, and *powdered sugar* – and it is very **soft & creamy**. It does not feel too jelly or stiff, which I was worried about because of the gelatin. The gelatin added some firmness to the base, and that's it. It feels like whipped cream that has been frozen long enough so that it stays together and keeps its shape when changed.
Each layer also has diced strawberries, as you may notice in the images.
