These are the doughnuts named after Berlin, called Berliners. Instead of jam however, I have filled them up with Balvarian Cream and Custard – 'cause I'm American and we don't do health here. Anyway, the lemon zest harmonizes really well with the rum and vanilla flavors in the dough. The filling somewhat adds to it, but to be honest, I could eat these without fill and still be happy 🙂

I didn't use strawberry marmalade. I tried to use a syringe piping tip (the really long piping tip) but the balvarian cream & custard wouldn't flow in as well... so, I instead used a normal piping tip and made holes in the berliner from one side - so I was able to fill the berliner without issues.

Yeah, it was really good actually. I recommend making it at least once. I definitely enjoyed the anticipation more than the dessert, but I think that is true for every dessert I bake.

ya, usually it's filled with strawberry marmalade but sometimes they fill it up with custard and mustard and all sorts of horrendous things too lol. I wanted to taste balvarian cream because I heard about it for the first time, and it was actually very good.
