Jiromaru always has good cuts, and it's mainly alacarte, so it's easy enough to satisfy different budgets. But it looks like they closed the one in Akihabara, and I haven't been to the one in (I think it is in) Shinjuku, so I can't speak on whether it's as good or not.

They add pork to their ramen, its just that the soup and noodle style isnt tonkotsu. Im not a big fan of tonkotsu so I don't have recs for that.

My fave tsukemen shop in Ikebukuro is Tori no Ana, but they use chicken broth so it may not be for everyone
