• The best one Fuchi Kuchi just closed but it’s reopening in December as ShiToraYa
• &room and &rumble are open all night
• As are Pebble and 3rd Stone Cafe
• Nomouze Group bars go until 2-3am, maybe later if people are still drinking https://nomouze.jp/top/
• Hanabie (花冷え) is open all night and reopens at 4-5am as Asabie for people who want to keep going
• Some of the bars in the building behind the Ozeki supermarket stay open
• Cream is a great DJ bar and although they have to stop the music at midnight, they stay open until everyone stops drinking
• Live Haus is a livehouse that often has all-night bar time, sometimes with DJs

Id honestly just jump on google maps and type in yakiniku and see what goes well. If you want no-frill chains, then gyu-kaku is most probably the most famous one, yakiniku like as well as mr cash suggested

Shinkansen tickets are expensive and kind of confusing

I try to buy them using the SmartEX app and linking it to my Suica card on my iPhone. It works pretty seamlessly, but I did have an issue this trip where my account got suspended after I bought them and linked them to my Suica card. I was worried they would void my tickets but luckily my Suica card scanned just fine.
