The cheap sushi trains are pretty decent. I go to Hamazushi and it’s $15 for 10 or so plates with lots of variety. If you want to go a little fancier, there’s omakase at Manten sushi for 8800¥ for 24 courses.
But other than that, the difference between $>$$>$$$ are so minuscule to justify the price imo.
