Honestly I'm not sure if I can think of too many recent vegetarian shops. I think these days I'm just more prone to get things I know are vegetarian. Obviously western food can be easier, but like with sushi stuff like Kanpyo rolls I love. Sushiro has a handful of vegetarian rolls and Nigiri I get all the time.

Yea, those places very heavily cater to foreigners. It's not that there's no Japanese vegetarians (not counting monks), but it's rare. Even things like Soy Meat are marketed more as "healthy" rather than vegetarian
