I only stayed 2 nights, the cable car up mount daishi has some beautiful views, you can take the cable car up and walk back down or vice versa, the cable car can stop halfway too if you want to only walk halfway up or down. Of course try the onsens, if you’re staying at a ryokan they usually give you a pass to try the 7 onsens around the town, I’m sure there’s a cycling tour you can do but I never done that
