Im on xbox so the patch still has not came out yet, I was wondering if I should complete my runs, start a whole new campaign and character, or should I just wait on the patch to release? I am on Annihilation on both my apoc run and hardcore run.

I would wait. I read that bosses completed pre-patch won't count. You might be screwed already but if you wait to beat annihilation at least you won't have to fight it again
