Ok so my car recommends ~30PSI and my tires take a maximum 51PSI. Should I be putting around ~40PSI or go with the recommended 30PSI?

Maximum means max safe psi

Run your oem recommended psi. On your plaque. If you do 40psi you will wear out ur tires fast.

#

Send a picture of your full plaque, on mercs they have different psi for front and rear.

#

Without the full pic I can’t tell if that is the front and rear rec or the recommended psi for when driving fully loaded.

The PSI that is on the tire is the rating for what is safe for the tire. Since the tire can be used on different vehicles with different weight, the manufacture states what is a safe rating of pressure when the tires are on the vehicle which causes a load on the tire. 40PSI is too much if your vehicle states 29-33. I would drop the PSI. It is dangerous to have over inflated tires.
