So I was under the impression that no at the end of a sentence was a question marking particle. But in native shark it translates to this is really good. I was under the impression the something like "really good" would have been  美味しいよ
since yo is used for emphasis.

の can be many things depending on the context.

In the case you’re mentioning, の is being used の no of explanation, like んだ

Question の would have a rising intonation

Oh okay I think i get it, similar to how sometimes we ask questions with rising intonations without an actual question word for lack of better saying
