This quite new and getting hang of making new pages but still want to know how to do some of these things.

Customization in terms of appearance is largely done with CSS. Putting something in MediaWiki:Common.css will apply to the whole wiki, but you can also have CSS specific to templates like infoboxes in separate pages using TemplateStyles

Once you're done making the category page, you should put [[Category:NormalNPCs]] in pages you want to include in that category

Also it's good to remember that if you want to link to a category page, you do it like [[:Category:NormalNPCs]] with the colon before Category. You can also change how it's displayed like [[:Category:NormalNPCs|Normal NPCs]] in the same way as other internal links

So basically a category is a group of pages that are related by what your category describes

With your example of Category:NormalNPCs, if you have pages for characters that are considered normal NPCs, you'd put [[Category:NormalNPCs]] in those pages (usually at the bottom)

If you just want to list information about the types of different NPCs without using that functionality of categories, it's better to do so in a mainspace page (without Category:)
