I may have the same error. I'm assuming it wasn't figured out?
I have used the AUR package with success, but if it isn't preferable to use the AUR, I would want the regular install.sh method to work.

aur is perfectly fine (and even suggested in the everest website!) so dont worry about it
this issue just seems to be some not up to date dependency

How do you remove the shortcut/other configuration made by install.sh btw?
Since this is a thing, and when opening Olympus sometimes the display gets weird, so I was wondering whether removing the erroring duplicate and hence never running it would help.

check ~/.local/share/applications and /usr/share/applications for any Olympus.desktop files

Ty, the former seemed to contain a shortcut to the erroring one.
Any idea why this might be happening, along with "window tabs" not showing a preview, and the "win + tab" equivalent not working at all, while Olympus is open? (Endeavouros, default X11 KDE Plasma I think)
