- you can make steam open vanilla by putting
--vanillain the launch options - yes that's possible, you just need a steam_appid.txt to be in the copy's folder, with some specific content

another folder besides the Steam folder where I can install Everest
but if I copy the steam folder with everything in it, can I install everest somehow?
I really don't understand what exactly your goal is and why you're trying to install something in a different place than another thing. Please be more specific about those things, maybe what you want can be achieved in a different, easier way that you didn't know of

unless you mean literally "celeste is installed someplace other than steam's default steam library location"
