everytime i try to install an everest build, it shoots out an error. i've included the last log it generated.

Not sure, the error mentions URI prefix which makes me think the everest:// scheme handler didnt get properly installed

What's the output of xdg-mime query default x-scheme-handler/everest ?

You could try downloading a build artifact and then installing that through Olympus

detail i probably should've added to begin with: i removed the "startup" section from Olympus.Sharp.exe.config because the application would get stuck in an infinite scanning loop otherwise.

Glad to hear it gladeline unfortunately it's not really a fix for the actual issue, but build artifacts are always available for download (that's where Olympus gets them from anyways!)
