im looking to remove one of my saves from the saves folder manually
so it shouldnt appear ingame but i have the backup of it
im just not sure which files to remove

just find the files that start with the appropriate slot number (0=first slot, 1=second slot, ...) and move them elsewhere

If you are using steam than make sure to turn off the cloud thing, steam does wack
