updates to the thirst / hunger display on the Character Info screen will show periodically, the same as on the main game HUD. the two are essentially mirrored, so you don't really see any extra info regarding those vs. just playing normally. If it did, that might give a bit too much of an unfair advantage in the future to dinosaurs that weren't nested in.
there's a whole bunch of ideas for how to communicate character status without UI that are being considered, so that hopefully it'll be 100% viable to play with no HUD needed in the future if you want total immersion.

I'm pretty sure you can't smell gore as far as you can smell water. I was on the radio tower in Thenyaw and I could smell water as far as Haven and great lake. I am highly doubtful I could smell gore from that far. Besides, I sniffed while walking and I could only see footprints for a while, then gore scent fountain spouted about halfway into the 'I can see scent trails' mechanic.

you don't need THAT MANY polys on planes that are supposed to be mostly flat
where the model bends needs a lot of polys for it to be smooth
most of the fine texturing is in the texture map, not in the model itself
...something about making the basic model in maya, then exporting the base model to zbrush or mudbox and adding all the fine details there, then retopologizing to somehow save all the extra details so you wouldn't end up with an ultra detailed model that had a million fuckin' polys in it, which would lag your game all to hell

Possibly the reason tribals are skinny looking is because they live in an extremely taxing environment devoid of many fatty food types. So instead most of the body mass is comprised of muscle maybe, seeing as they could well be genetically improved humans. That could explain the poly count on the chest too. I'm nowhere near an expert in this, but if poly count relates to surface movement then perhaps the skin on the tribals body is going to feature realistic pulling and muscle movement textures. Like when you turn to the side, you can see the muscle tightening and the skin gets pulled taught. Would make sense if there is no fatty tissue.

Well, the head may seem deformed, but it also could be better adapted for life in The Isle. The nostrils are larger and more developed by the looks of it, allowing for a better sense of smell. The ears are also larger and face forward more. Mouth is bigger, cranium is larger. I'd say these are adaptions that point to a better hunter and survivor. Could be wrong, but they are meant to be superior humans.
