First off, always mount EFI after root

Not sure why it’s failing to mount root though
Is the partition encrypted or not
But is it actually an encrypted volume
Do you enter an encryption password when you boot up?
Then it’s most likely not
It’s possible that you broke up the partition/filesystem when messing with cryptsetup
umount <mount>
