you need to differentiate between archinstall - a script built into the iso, and someone who has installed arch manually, either way, you select the packages you want to install, if you want bloat, you install bloat, if you don't, you don't install bloat.

if you're worried about bloat, i don't recommend using third party assistance but rather follow the installation guide; that said if you have a wired connection available to connect to in order to install necessary packages there's no need to even consider reinstalling

follow the guide manually, it walks you through setting up iwctl for the install and you can install everything you need after you chroot into your fresh install
