Dumb idea, but how about clean installing gnome using arch wiki? It was breaking for me few times when I was using it on endeavor from the box gnome installation but in different way. For now latest gnome packages working fine for me including dark theme and I did basically nothing apart from rebooting few times.

Nah. It will not touch your configs and preset modules it will just reinstall like making an update with the same version of package if you use only -S

I honestly don't remember check pacman arch wiki page, there should be excessive info about deleting the package with all configs and artifacts created by the package.

I think you can download the adwaita theme itself and then change on gnome tweaks
