If your talking about the Gaspe Peninsula Caribou, there are less then 50 caribou in that area and they could go extinct, if you want an alternate species I am aware that Quebec (I am assuming its set in Quebec) does allow for the hunting of Grey Seal and Harp Seal

I have heard of those hunting preserves in Quebec, the one I see advertisements most is called Roxton Falls (https://appalachianwilderness.ca/en/) which mainly focus on Red Deer and Elk. According to their website its located east of Quebec City. It should be said I would prefer a reserve in Eastern Canada that does focus on native game species like the various sea ducks with some small game species and a couple big game species and if a reserve in my province can feature native game species like bighorn sheep, moose and wood bison I'm sure a reserve in Quebec can feature animals like eider, ruffed grouse and groundhogs to name the unique small game species

I will also add that a reserve set in Quebec would be perfect for breaking the Moose and White-tailed Deer into their respective subspecies with the province being home to Eastern Moose and Northern White-tailed Deer respectively and since a reserve in Alberta does have Woodland Caribou (Despite being endangered here), I could see a reserve in Quebec also featuring Woodland Caribou on the same basis
