Or at least I can't get it to do it, the option to track species or track spotted just does not show up in the menu. No clue if other species are also affected.

They don't track [edit: Class 6] or larger predators. However, they will track those lower, such as Snow Leopards, foxes, and coyotes.

The community manager (Jaxy Beard) stated in the EW weekly stream that the dog will not track Large predators (Classes 6-9). [Previously, I mistakenly said Class 5 or larger.] However, it is also stated on the pop-up help and the Codex tutorial for the GSP. I can confirm that they will track Snow Leopards, raccoon dogs, and foxes from my own experience. I have not yet tried with Class 5 mountain lions, but they should, in theory, work.

Black Bear is not technically a "predator" IRL... they eat mostly plants and berries on their own and only seek out weak or wounded meats like a scavenger.
