Okay so I was doing the Jager number one mission and I was tracking a fella deer not knowing when I killed a deer it resets when I picked up the deer, the tracks reset and the mission. I can't do it cuz of that. I'm not asking for y'all to fix that. I'm asking how can I fix it? Like how do I reset it without starting all over and pressing new game? Thank you for y'all's time. I'm sorry to hear you experienced trouble with the mission "Jager #1". I know this can be confusing.
There is no way to reset missions without erasing all other progress in the process, however, in this case, you can finish the mission without making any such changes.
If you killed the fallow deer you were tracking, you can simply look for another one in the Rathenfeldt region and inspect 5 sets of its tracks to complete the objective. The mission doesn't limit you to a specific fallow deer, so any of them will do as long as you inspect 5 tracks of the same one.
