This is so lame. I think max lvl should be a diamond in at least 80% of the cases. Kangaroos, Reindeer and yak are the worst offenders.

While I can see the frustration, I don't mind. For all these species, the males are already naturally big and usually Gold except at the lower levels. Just by shooting them randomly, you are going to see their levels go up over time, including to max. level.
In order to help keep Diamonds as a significant achievement, it seems that the top level animals are not respawning as Diamonds as frequently compared to species where males can cover most, if not all, of their level range (such as bears or red deer). Just note where you shot the "troll" (i.e., a really big Gold), and come back to see if it respawned as a Diamond.
