Automatic taxidermy on the harvest screen for great ones and rares or a are you sure prompt, so you don't accidentally sell it. Same with are you sure for deleting it in the lodge.

“Are you sure” would be better. I know it’s obvious everybody is gonna taxidermise them, but from a technical standpoint, anything that automatically spends your money should be avoided, or at least opt in.

I agree the prompt would be better. Also denoting rarity in the harvest screen and expanding the automatically saved recent harvests from 1 to say 5 could help with accidentally forgetting to taxidermy.
