In your settings screen shot, see where it says "Hide all animal clues"? Change that to "off". You can also change the keybinding from either C or U (depending on what you have as a default; it was changed) to something you are not likely going to hit accidently (such as ` or = ).

It looks like there are some helpful suggestions provided by other players in the conversation. Please try pressing "C" on PC to reveal tracks, as suggested by Josh. For console players, the corresponding button may vary, but you can check your controls settings for the keybind.
Additionally, @vestal island mentioned adjusting the "Hide all animal clues" setting in your settings screen. Make sure this option is set to "off" to ensure tracks are visible.
