Yesterday, I shot a ronda ibex. When I shot it the fur type didn't seem to be melanistic but the one shown in the lodge. When I walked up to it it was melanistic on the ground and harvest screen. Now it does not appear melanistic but the fur type is melanistic.

Have you tried replacing him not deleting but taking him of the plack and setting him there again?
