I think a jungle map would be perfect. Something like emerald coast, but thicker vegetation. You could have small monkeys or birds (non killable assets like some of the gees on Hirsch) rummaging around the canopy. Intense rainstorms, and dense fog during early mornings.
Now as for animals, the sky is the limit. For starters jaguars, and black caiman. There's also buffalo, bush dogs, capybara, egrets, harpy eagles, ocelots, otters, peccary, and tapir, I believe there are some wild/feral lamas but those might be more in the mountains than in the jungle, but there's an almost endless supply of animals.
You could have solo missions like Yukon, or emerald coast where you clean up some of the environment. Possibly a mission where you encounter a uncontacted tribe, or at least discover their presence in, or around the reserves?
I'm not sure what you could have for weapons, maybe a atlatl, or primitive bow (even though we already have one) perhaps a slingshot, maybe a new gun thats like the 243 but stronger, and that would cover most species except maybe the caiman, or tapir idk
I would love to see a map deep in the jungle just teeming with life showcasing the sound, and colours that life produces.

It’s 100% Illegal To Hunt In The Amazon. Brazil Outlawed Hunting Years Ago, And Perú Has Incredibly Limited Opportunities For Hunting Last I Checked. In Bolivia You Cannot Hunt, But You Can Join Natives On Hunts.
See I was thinking more along the lines of hired game warden brought to sorta restore balance rather than hunter on vacation.
I also thought most of those animals were protected due to location rather than their numbers but apparently all tapis are endangered which is quite sad
