#Are rare 'furs' supposed to be automatically spawning or is it random? How do I know if they exist?

Still no sign of a Melanistic Banteng, though. At least I have an idea of what I'm looking for. It should not show the characteristic pale rump patches.
If a mission requires it, then there will be one, somewhere - missions are programmed so that you can complete them (assuming no errors, of course). In general, fur types are generated randomly, though
If you get stuck on a mission, you can always select a different mission (if the first is not a blocker for a story arc that you want to complete), and you may come across a situation where, as luck may have it, you can complete the first ( you always get credit when you do something that matches any mission objectives, regardless of the mission's active state).
The other thing to try is to force the active mission to 'reset itself' to the first incomplete step in its task list - you can do this by exiting the game, re-entering it and continuing. If you are supposed to be in a specific location, put a tent down, rest to advance the time by about 1 day, exit the game and re-enter. The current active mission will then be set up for the first uncompleted task.
That being said, there is no requirement for a mission to be easy to complete. Sometimes you get lucky, most times you have to work hard to get it done. This is a game of patience and perseverance
Days? I've had missions that take weeks or months to complete, even though there is only one task - Hunt a male and a female coyote with a bow (in Layton Lakes), where this time around my coyote population is so small that ACME stopped delivering orders because it isn't cost-effective LOL

If it is a mission animal, as in Mr. Black, it will spawn and be there. In the case of "find an animal with this or that, then you are at the mercy of the RNG hunting gods. Some missions are designed to have different levels of difficulty. In your case I'd suggest your best bet is to focus the species and over time you will eventually get the skin you need.
