i was planning on using 2x4s and 1x6s from home depot with a dark walnut and water based polyurethane as a finish coat
I don't have the expertise to comment on the design specifically. I can tell you that construction lumber and especially 2x4s are prone to warping because they are not completely dry from the store.
So for something this complicated, I would suggest you buy something properly dried or plan to wait several months for the home center wood to dry.

Yup, joinery worries me. And those bed surrounds especially as they are safety critical.

There is some joinery that isn't represented. Such as brackets to connect the legs to the bed.
Also is there a type of wood that is both cheap and strong and would look good with a darker stain on it?

Poplar and Cherry are relatively cheap, and don't have the downsides that construction lumber does (if you purchase them from a real lumber yard and not home depot)
to get out of construction lumber, about the cheapest you'll likely find is $4-$5 / bdft, region dependent. cherry and red oak are probably your best bets. you can calculate how many bdft you need for your project and do the math

So assuming you can get some worthwhile lumber at $5/bf with a 30% waste factor (which is pretty optimistic) you're looking at $708 (at least) in lumber.
