Previously my game would freeze up when trying to help Tali take down a Geth dreadnought. After verifying the game files on steam, I tried to reload back into the game. But now the game just crashes when loading up a save. My backups werent working either, and in a bit of frustration, I deleted them.
Any ideas on how I can at least get ME3 back to normal (without mods).

Verifying the game files through Steam won't necessarily remove all mod files. Without a backup, you will need to delete the game directory itself and redownload entirely through Steam. That will guarantee your game is vanilla.

Funny enough, I legit just started doing that
I got Mass Effect re-installing right now after I erased the entire directory

Depending on what mods were installed your sve may depend on them - some outfit pieces for example are recorded in the save
