Well, if you do the guaranteed legendary missions that harriet offers, you can give the pelt to Cripps and it's an easy 50 material at times.
For example, the legendary elk has antlers worth 6 materials and the pelt is worth like 46.

At some point it'll be visible with a certain remaining time and that's when you can check if you still have enough time to finish the mission.

There's a plausible reason as to why they did this.
Back then, in GTAO there was a mission called Rooftop Rumble, you could finish it in 3 minutes or so and would get a solid 20k each time.
It was farmed to no end, and that's kinda what probably got them on that track to avoid people farming easily.

Yeah it's the awards under the progress section in the start menu, @zinc maple go through all those tabs and see if any are gold. You get .4 gold bars if you reset them. Only some can be reset though
