@candid rover Nocagdoches is statistically the best, but it doesn’t really matter on which one you really pick so long has you have a good pair of stirrups on it. The core drain bonuses from saddles aren’t a big deal since food so so cheap. And while the Nocagdoches allows you to get an additional +1 to Speed and acceleration, and an additional -20% stamina drain, that no other saddle can get, it makes such an insignificant difference that it shouldn’t impact what you choose. Find a saddle that you like the look of, put on a high rank pair of stirrups for the -50% stamina drain, and you’ll be fine

Collector is undefeated in making Cash and XP for solo players. It’s just a very tedious, and long process for a huge reward.
Trader requires hours of hunting for a payday that can be shared with posse members. Not a bad choice for a group.
Mooneshiner is a subTrader role, better for solo players. You’ll earn more from Moonshiner than you would with Trader in the same amount of time, but posse members don’t make as much from it as they would with Trader.
Bounty Hunter is the only role that rewards Gold for its content, and isn’t too shabby for making cash. It’s a repetitive gameplay loop but if you like fighting, and want to earn your gold back in the process, it’s a good choice too.
