I use different horses depending on what I'm doing. If I'm bounty hunting or searching for gang hide outs I'll typically use Dante, my Steel Gray Breton. If I'm collecting I'll use my Criollo, Coffee. General purpose free roam I switch between Shadowmere, a Black Chestnut Thoroughbred, or Storm, my White Arabian.
