There's currently a bug that yields perfect pelts once you skin it after a one shot varmint kill.

Then you won't have the hassle with losing your pelts/meat.

My favorite spot to hunt is the open area north in Big Valley.
Wolves and bears there too for big game meat.
And lots of herbs so you can cook up some good stuff.
