I currently have a GTX680 and a i5-6500 with 16gb 3200 DDR4 ram.
I want to be able to play MSFS 2020(on medium settings) at around 60 FPS(or higher if possible).
What should i upgrade?(bearing in mind that im broke asf)

What should you upgrade? lowkey everything, since both your CPU and graphics card are below the minimum requirements to run the game. You may be able to get away with just upgrading the graphics card, but the i5-6500 is only a 4 core and it's gonna struggle

The newest CPU option you'd have is a 7th generation Intel Core, which I cannot recommend in 2025. For the same price as a used i7-7700 (around $50 on Ebay), you could get a Ryzen 5 3600 which is newer and wayy faster (but would require changing motherboard, so add on another ≈$100)
For graphics cards, really depends what you can find used in your area. MSFS recommends at least a gtx 970. Cards like the 1060 6GB or RX 6600 would work, depending on your budget
