raid z1 on truenas would be good, depending on the number of drives you have

but if you want to be able to add drives willy nilly, unraid would be the better option.

i believe truenas has plugins for similar functionality, but i have not researched that.

one thing to note though, unraid is not free

I really like unraid for basically your exact requirements. I have ~90tb of usable space in my NAS, across 8 drives. Also look at LSI SAS cards to add more drives than you have sata ports.
