Xeons, being Intel's enterprise solution rather than consumer, are more focussed on multicore performance, and don't boost as high on the clock speeds.
Depends a lot on the type of games you play, but you might get some CPU bottlenecking as a couple of cores/threads get overloaded and the rest sit idle
