This has been something going through my mind for a while but with the Demo having an official release date now, if one were to obtain the ultimate guardian tier, would they still be able to have an NPC represent them within the Hall of heroes?

Yes, there will still be wave(s) of Patreon NPCs added to the demo before release, for any new/missed NPCs. There is no official cut-off date just yet, but if you're subscribed to the ultimate guardian tier for the month of April/May you'll be good to go!
